Description
A Slo Cook & Hold Oven and gently uses Halo Heat®, which evenly surrounds your foods without transfer of flavors from one dish to another, to cook and/or hold your foods while protecting their natural moisture and taste and lowering shrinkage. It’s a two compartment unit with a 120 lb capacity each, made of 20 gauge stainless steel, with magnetic latching doors on each compartment. There are also three stainless wire racks with each compartment, along with stainless drip pans with drains and external drip trays for each. Individual power switches and temperature control knobs operate each of them, with a range of 200 to 325F for cooking and 60 to 205 for holding. There’s a digital display and a cook and hold timer as well. Indicator lights identify the function in use. Oven hoods and outside ventilation aren’t required with these pieces in most places, because their emissions of grease laden air are less than UL established standards.
