The Matfer Bourgeat Exopan Steel Fluted Tart Molds are a high-performance steel mold with fluted edges, designed for creating individual cakes, tarts, and quiches. These tart molds are equipped with a removable bottom to serve as a base to pastries while separating the outer ring for cooling and decorating. Manufactured in France, this mold is made of Matfer’s Exopan material, a fine steel with a nonstick coated interior and a protective enameled exterior, that are PFOA free. Exopan combines the quality of cooking in tinplate with the benefits of a nonstick surface, contributing to overall development of product color during baking. Its nonstick surface eliminates greasing resulting in a clean release during depanning. The protective enamel ensures durability that will withstand heavy use in professional kitchens. Freezer and oven safe, Exopan molds have a resistance to temperatures ranging from -4F to 482F. These tart molds are available in a choice of four sizes; each is sold separately.
