Convection heat draws humidity out of the unit through a rear vent to enhance food’s crisp texture, while radiant heat combined with a pan of water can keep items juicy and moist. This holding cabinet also boasts a narrow design with two independently controlled cavities and comes with 5″ neoprene casters for enhanced mobility.
